Number of Servings: 2

Ingredients

    1 tb. extra virgin olive oil
    6 oz. pork loin chopped or sliced thinly
    1 cup chopped onion
    1 large baby zucchini
    6 mushrooms
    1 cup diced tomatoes
    1/2 cup cooked rice
    1 tsp. black pepper
    Dash of salt
    Dash garlic seasoning

Directions

Cook pork in oil. Remove and set aside. Add onions to cook, then add mushrooms, zucchini and tomatoes and simmer until at desired texture. Add cooked rice, and seasonings to taste. Makes 2 generous servings.
