1 C. quinoa 1/4 small onion 2 baby carrots 1 stalk celery 1 clove garlic 1/3 C. walnuts 1/4 C. dried cranberries .5 T. olive oil
Cook 1 C. quinoa with 2 C. Water 15 -18 min on simmer or until most of liquid is absorbed. Finely dice veggies, walnuts. Mince garlic. Saute nut, veggie, garlic and cranberries in olive oil stirring frequently until onions are cooked (about 4 minutes). Stir in cooked quinoa and mix thoroughly. Divide into 4 servings.
