Chocolate Banana Cake

This cake is low fat but not low sugar. It is very moist and fudgy.

Ingredients

    3 Bananas
    1 1/2 c Brown sugar; packed
    2 t Oil; vegetable
    1 Egg
    1 1/4 c Flour; all purpose
    1/2 c Cocoa powder; unsweetened sifted
    1 1/2 t Baking soda
    3/4 t Baking powder
    1 pinch Cinnamon
    1 pinch Salt

    3/4 c Fat Free Yogurt

Directions

Preheat oven to 350 degrees.

Line pan(s) with parchment and spray with non-stick spray. Makes 2 - 8 inch round, 1 - 9 inch round or 1 - 9x13 inch rectangular cake.

In bowl, combine flour, cocoa, baking soda and baking powder, cinnamon and salt. Set aside.

Peel three bananas, and place them in the bowl of a mixer fitted with the paddle attachment. Beat until mashed, about 1 minute. Add brown sugar, oil, and egg; beat until smooth. Reduce speed to low. Add dry ingredients; beat until smooth. Add yogurt and ; beat until just combined.

Transfer to prepared pan(s).

Bake in 350F oven for 30 to 45 min (depending on pan shape and size) or till tester inserted into center comes out clean and cake springs back when pressed. Let cool in pan on rack for 20 minutes.
