Sunny Oatmeal with Apricots

Introduction

Ingredients

    .25 c. old-fashioned oatmeal
    2 T. Sunny Boy multi-grain cereal
    .5 scoop Jay Robb Vanilla Whey Protein powder
    .25 t. cinnamon
    1.5 c. plain soy milk
    .25 c. dried apricots (no sugar added)

Directions

In a very large cup or regular serving bowl, mix together the oatmeal, Sunny Boy, whey powder and cinnamon. Add about 1/2 c. milk and stir. Add the rest of the milk and stir. Add cut up apricots. Microwave on high for 3 min. Stir. Microwave in 2-min. periods at 30% power (about 3 periods), stirring each time until porridge is cooked. Let it sit in the microwave for a minute or so to thicken.
