Chicken Salad -- fast and easy


This is a very fast and easy way to make a great lunch that is low in calories.

Number of Servings: 1


    boneless skinless chicken breast , 1 frozen
    mayonnaise, 1 TBS
    sea salt
    coursely ground black pepper
    other seasonings to taste
    non-stick cooking spray (I prefer the olive oil type)


Preheat oven to 350 degrees. Spray baking pan with non-stick cooking spray. Place frozen chicken breast in pan, and spray chicken breast well. Season with sea salt, coursely ground black pepper, and other spices as desired. Bake for approx. 30 minutes or until done.

Cut up chicken into very small pieces, add 1 tbs of mayo (if you prefer you can use reduced fat mayo to make it lower calorie). The chicken is already seasoned so you don't need to add any more seasoning, and the 1 tbs on mayo is enough to cover the single piece of chicken.

Depending on how big your piece of chicken was, this will make enough for a generous sandwich, or sometimes more than one.
