Celery Onion Tofu Curry

Introduction

Great over brown rice or alone. Great over brown rice or alone.
Number of Servings: 4

Ingredients

    1 stalk celery
    2 medium onions
    2tbsp canola/olive oil
    4 tbsp curry
    1 block extra firm tofu
    1 cup plain yogurt, low or nonfat

Directions

Chop tofu into cubes. Place on lightly oiled cookie sheet. Bake in 400 degree oven, turning often till lightly browned. Chop celery and onion into chunks. Cook until soft in oil. Mix in tofu, curry and yogurt.
