Coconut Cherry Chicken

Ingredients

    1 tbl corn starch
    2 tbl lemon juice
    2.5 cups fresh or canned cherries, pitted
    1/2 tsp ground cinnamon and allspice, ground
    1/2 cup flour
    8 oz chicken tenders, thawed
    cooking spray
    1/4 cup coconut, grated and toasted

Directions

Serves 2.

Dissolve cornstarch in lemon juice and stir together with the cherries.

Combine spices and flour in a bag; add chicken and shake, coating the chicken.

Coat skillet with cooking spray and brown chicken. Recue heat and simmer about 20 minutes. Remove chicken from pan, cover with foil. Remove all but 1 tbsp of pan drippings, add the cherry mixture and boil until it thickens.

Pour over the chicken and garnish with toasted coconut.
