Billy Bob's Vegetable Turkey Meatballs

Introduction

If you love Spaghetti & Meat Balls then here is a healthy twist on meat balls that everybody will love. Not just for Spaghetti either. they can be eaten just on there own. Number of Servings: 13

Ingredients

    Lean Ground Turkey Meat (around a pound)
    Fresh Red Peppers Chopped ( 2 oz or 1/4 Cup)
    Fresh Mushrooms Minced (1 gram) Aprox 2 Button Minced
    Fresh Baby Carrots Diced (2 oz)
    Extra Virgin Olive Oil (EVOO) 1 Teaspoon
    10 Regular Triscuits Crushed
    1 Tblsp each of Your Own Favorite Spices (I used Basil, Oregano, Crushed Dried Red Pepper, Ground Black Peppercorn, Garlic Powder and Spicey Chilli Powder)

Directions

In a medium sized bowl add all your spices and mix together until it is a unified color. Then add in your lean turkey meat and EVOO and nead the meat, spices and oil together until you don't see any spices left at bottom of bowl. Once that is done add in the vegetables and once again nead in to the meat spice mixture. I use my hands and get right in there and mix and nead (very therapeutic) and then add the crushed triscuits and once again mix and squish all the ingredients together. Will create a large unified ball. Preheat oven to 350 Degrees, take a muffin baking platter and spray some non-stick cooking spray in each section (usually 12 to platter) Fill a 1/3 cup measuring cup with meat mixture using a spoon until level with top of the measuring cup. Remove mixture and shape into a ball then place ball into the muffin platter. Repeat until all meat mixture is gone. May need two platters as this makes 13 to 14 servings. Once this is complete place into preheated oven and let cook for 25 minutes or until top of meatballs are a nice dark brown. Take out and very carefully using a spoon and oven mitts turn each meatball upside down and replace into oven for another 10 to 15 min until that side is brown also. Remove from oven and let stand for 5 min. Test one to make sure it is cooked all the way through. Now you can serve with whatever you would like. Enjoy!
