Whole Wheat Almond Pancakes

Number of Servings: 7

Ingredients

    1/3 cup whole wheat flour
    1/2 cup flour
    1.5 tsp baking powder
    1.5 tsp sugar
    0.25 tsp salt
    1 egg plus 1 egg white
    3 tbsp unsalted butter, melted
    1 cup 1% milk
    1/4 cup sliced/chopped almonds
    Cooking spray for pan.

Directions

1. Place dry ingredients in large bowl and whisk together.
2. In second bowl, whisk together egg, egg white, melted butter and milk.
3. Add wet ingredients to dry and whisk together until well blended. Stir in nuts.
4. Preheat large flat pan / griddle. Spray with cooking spray. Use a 1/4 cup measuring cup to spoon batter on to griddle. Flip pancake after small bubbles form and pop and edges are brown.

Serve warm with toppings if desired. Should make about 7 4-5" diameter pancakes, maybe 8 if you are careful with measuring.
