Chix Salad Salad

Introduction

Ingredients

    Chicken Breast, no skin, 1 breast
    Light Mayonnaise, 2 tbsp
    Romaine Lettuce, 1 cup
    Mushrooms, 1 sliced
    Mozzarella Cheese, part skim milk, 1 oz
    Light Raspberry and Walnut Vinaigrette, 5 tbsp
    Water, 1/2 cup

Directions

~Cover the chicken with the dressing.
~Place in the pan chicken with a little extra dressing and water on medium heat. Cover and let simmer for 15 mins. Check the chicken and let simmer for 5-10 more mins. Remove the pan from heat and let sit.
~Take the romaine, place in a bowl.
~Add the mushrooms and cheese.
~Take the chicken and cut into bit-sized chunks.
~Mix chicken and mayo together.
~Add chicken to the romaine, and mix together.

This is for one serving, but just double the recipe and you can feed the family.
