Black Bean Pockets

Number of Servings: 6

Ingredients

    1 can Black Beans, drained and rinsed
    1 c Whole Kernel Corn
    1/2 c Onion, chopped
    1/4 c green pepper, chopped
    2 t taco seasoning
    6 Large Flour Tortillas
    3 oz Jack Cheese, grated
    Chunky salsa

Directions

Drain and rinse beans and corn. Add to large skillet with onion, pepper and taco seasoning. Cover and simmr until onion is translucent (about 5 min). Place about 1/2 c on each tortilla, top each with 1 T grated cheese and fold into 1/4's so the tortilla forms a pocket. Serve with salsa and a green salad. Makes 6 servings
