Introduction

I had been gathering leftovers in a freezer bag for about a month in the freezer. Each week when I had a little leftover veggie, meat or rice, I added it to the bag and replaced it in the freezer, and today there was about enough rice, chicken, and other stuff to start a soup. You can use various veggies, etc. depending on what you have available. I had been gathering leftovers in a freezer bag for about a month in the freezer. Ingredients

    Minute White Rice (1-cup cooked rice), 2 cup
    Herb-Ox Sodium Free Chicken Boullion, 4 tsp.
    Vegetable - Carrot - fresh, 300 gram 3 large fresh
    Summer Squash, 1/2 medium, without seeds
    fresh Green Beans (snap), .5 cup
    Onions, raw, 1 cup, chopped
    8 cups of water
    Chicken Breast, no skin, 16 ounces chopped
    The following is a guesstimation of the seasoning: Celery Salt, 0.25 tsp; Paprika, .25 tsp; Garlic powder, .25 tsp

Directions

Fill a soup pot with water, add bouillion and onions and meat, let simmer, then add fresh veggies, and other ingredients. Let simmer at least an hour. Be careful that the pan does not scorch. Sometimes the rice settles on the bottom and will do that.
This is fairly low in sodium, and high in potassium. One serving is about 1 3/4 cups. Enjoy. I know I will tonight
