Ingredients

2 pounds cod or haddock fillets
1 egg, beaten
1 T. olive oil
¼ tsp. EACH salt, pepper, garlic powder, dillweed, paprika
1 cup dried bread crumbs
Directions
Preheat the oven to 400ºF. Cut each fillet into 3” wide pieces. In a shallow dish, combine the egg, oil, salt, pepper, dillweed, paprika and garlic powder. Place the cornflake crumbs in a separate shallow dish. Dip the fish pieces into the egg mixture, then in the bread crumbs. Place on a baking pan that has been coated with nonstick vegetable spray and bake for 20 to 25 minutes or until the fish flakes easily with a fork.
