1 package Near East Plain Couscous
1/4 cup sliced zucchini
1/2 cup sweet bell peppers
1/4 cup feta cheese
1/4 cup toasted walnuts, chopped
1/2 cup red seedless grapes, halved
fresh parsley, basil, and/or chives to taste
2 TBspn olive oil
2 TBspn lemon juice
1/4 tsp kosher salt
black pepper to taste
2. Grill or saute zucchini and bell peppers
3. Toast walnuts
4. Chop fresh herbs to taste
5. Combine all ingredients.
May be eaten warm or chilled. Enjoy!
