High Energy Pancakes

Ingredients

2 Large Eggs
1 cup Apple Sauce
8 oz container plain yogurt
1 tbsp baking powder
1 tbsp cinnamon
3 tbsp vegetable oil
1/2 cup dry Cream of Wheat
1 cup 100% Whey Protein Powder
Directions
Mix all ingredients in your blender until smooth and has the consistency of pancake batter. Spray nonstick skillet w/ small amount of cooking spray and pour approx. 1/4 cup of batter onto medium heat skillet. Cook lightly on each side (these pancakes can become dry very quickly.) Remove from pan. Top w/ more apple sauce and/or light whipped cream or a topping of your choice. Enjoy energy for the rest of your morning.
