Surprise Detour Pork Ribs

Introduction

My Cookout got rained out as I was about to roll the grill out.
My solution was to improvise instead of forget it...I already had the ribs ready to go. I seared then slow cooked these till tender. As a last thought I poured in a can of pepsi to take the place of the BBQ sauce. I simmered the ribs stirring occassionally. The result was tender and tasty with less fuss and cleanup than the cookout..

Number of Servings: 10

Ingredients

    1 slab lean pork ribs (about 4 to 5 pounds) cut into serving size pieces.
    1 teaspoon garlic powder
    1/2 teaspoon ground sage
    1/2 teaspoon black pepper
    1/2 large lemon, squeezed for juice
    approximately 1/4 ounce light olive cooking spray
    1 - 12 ounce can pepsi

Directions

Spray olive oil on bottom of a large skillet with tight lid,
(I use a Chef's Skillet with a tight fitting glass lid.
after adding ribs to the skillet spinkle them with the
garlic powder, sage, and pepper (more or less to taste...I use sparingly.)
Sear the ribs in this until they are mostly browned.
Drizzel lemon juice over the meat

cover skillet, reduce heat., & cook until tender

Once the ribs are tender, drain the grease that
has cooked out of them and discard it.

Remove cover from skillet

add pepsi to the ribs (or coke)

Continue cooking Ribs uncovered.

Let the the pepsi almost evaporate.**

**Do not burn the skillet...fom the pepsi's
sugar. It is difficult to remove once stuck to
pan.

serve at once
