Introduction~A hearty, beefy stew that'll take you back to the Oregon Trail! Great with bread or biscuits. ~A hearty, beefy stew that'll take you back to the Oregon Trail! Great with bread or biscuits.
1 tbsp butter*
1 large onion, diced
~1lb stewing beef, cubed
~11.5 fl oz tomato juice (ex. 1 can v8)
4 med potatoes, cubed
2 large carrots, cubed
1 parsnip, cubed
1 med. tomato, cubed and seeded
a large pinch of ground cloves
*olive oil can be used instead of butter
Brown onions in the butter until almost soft and translucent
Add beef and cook until brown
Add spices- careful not to overdo it. You can add more later.
Add tomato juice, return to a simmer
Add cubed vegetables and add water just to cover the vegetables
Cook on med to low heat until vegetables are soft, and beef is cooked throughout
