Broccoli Rice Quiche

Ingredients

    1 1/2 cups cooked Brown Rice, medium grain
    3 oz grated cheddar
    3 Egg,
    3 oz skim milk
    3/4 canned Mushrooms
    1 1/2 cups cooked Broccoli, chopped
    1/4 cup chopped onion
    1/8 tsp Pepper, black

Directions

Mix hot rice with half of the cheese and one of the eggs.

Spoon into a sprayed 9" pie plate and press to form a crust.

Beat the remaining two eggs. Stir in the remaining ingredients less the cheese. Spoon mixture into rice shell.

Bake at 375 for 20 minutes. Sprinkle top with remaining cheese and bake another 10 minutes.

Let Stand at least 5 minutes before cutting.

Makes 3 servings.
