Spicy black beans

Introduction

Nicely spiced with good flavor, but nothing overpoweringly strong. I left the beans whole to use as burrito filling, but it would be good mashed as a dip or spread as well. Number of Servings: 6

Ingredients

    2 cups cooked or canned beans
    1 small onion, diced
    1 large clove garlic, minced
    1 small hot or jalapeno pepper, minced
    1/2 medium red pepper, diced
    1/2 tsp dried oregano
    1 tbsp olive oil
    1/2 cup corn niblets
    1/4 tsp cumin
    1/2 tsp salt
    2 tsp chili powder
    2 tbsp cilantro, minced

Directions

1. In a saucepan, sauté the onion, garlic, oregano, and jalapeno pepper in olive oil using medium-high heat until the onions are translucent. Add the red bell peppers and sauté until pepper is tender, approximately two minutes.

2. Mix together the beans, vegetables (including the corn), cumin, salt, chili powder, and cilantro.

Side note: I mashed my beans a small bit with a potato masher to release fluid so the spices would cling better.

    Haha, that would be helpful information wouldn't it? Two cups cooked beans. The person I got the recipe from says she does it both with cooking her own beans, and with canned, though I would think canned might add sodium. I did with beans I cooked myself personally.
