Low-calorie Brownie-like Cake

Introduction

A great low-calorie alternative to brownies - you can also use the batter for muffins, for fruit cakes or for birthday cakes. Very easy to make and very tasty though. Ingredients

    Bowl 1:
    * Flour, white, 1 cup
    * Rye flour, light, 0.5 cup
    * Cocoa, dry powder, unsweetened, 4 tbsp
    * Salt, 1 tsp
    * Baking Soda, 1 tsp
    * Truvia (Zero Cal Stevia) or any other zero cal sugar replacement - as many tsp needed as if using 8 tbsp sugar

    Bowl 2:
    * Apples, fresh, 3 medium (2-3/4" dia), boiled, cubed
    * Egg, fresh, 2 large
    * Milk, nonfat, 0.5 cup
    * Ginger, ground, 1 tbsp
    * Vanilla, rum essences to taste

Directions

Mix and blend ingredients in bowl 2 until you get a soft cream. Pour it in bowl 1 and stir until you get heavy cream. Pour it in a lightly greased oven dish and bake for 45 minutes or until a stick inserted in the dough comes almost dry and clean. (Note that it will never come out perfectly dry - fruit batter tends to bake a bit moist).

For extra-savor you can add raisins to the batter and sprinkle some grated coconut pulp on top.

Makes 12 thick slices.
