Greek Chicken and Potatoes

Ingredients

    3 lbs chicken breast and or thighs
    3-4 TBL olive oil, plus more for dressing
    1 cup onion, chopped fine
    5-7 cloves garlic, chopped
    1 1/2 lbs soft-skinned potatoes, cubed
    2 lemons, zested and juiced in separate containers
    1/4 cup fresh oregano, chopped
    salt and pepper to taste

Directions

- Season the chicken breasts with salt and pepper and roast
at 375 until nearly done about 45 minutes. Set aside.
- Heat the oil in an oven-proof pan and sweat the onion for about 2 minutes
on medium heat. Add the garlic and cook for about 1 minute.
- If using chicken thighs, season them and add to the pan, saute until some
light color appears on the chicken. Add potatoes. Season generously with
black pepper. Toss to coat and cook
for about 4 minutes. Add oregano and zest and toss cooking for 1 more minute.
- Place pan in a pre-heated, 350 oven for about 30 minutes, stirring
occasionally and adjusting seasoning. Meanwhile, shred the chicken
breast into large chunks.
- After 30 minutes, add chicken breast to the pan, tossing to
incorporate. Roast for another 15-20 minutes until potatoes and
chicken thighs are done.
- Just before chicken is removed from the oven, whisk together the lemon juice
and enough olive oil salt and pepper to make a dressing.
- Serve on a plate with a fresh pile of baby arugula or other greens, dress both
the greens and the chicken mixture with the dressing to taste.
