Grubbin' Chili

Introduction

This chili is SO GOOD! With the weather cooling, it was calling to me. So as I have a pot simmering on the stove, I thought I'd enter it. This chili is SO GOOD! With the weather cooling, it was calling to me. So as I have a pot simmering on the stove, I thought I'd enter it.
Number of Servings: 9

Ingredients

    2 cups frozen Morningstar soy crumbles
    1- 29 ounce can of Tomato Sauce
    1 can low sodium black beans (with liquid)
    1 can kidney beans (with liquid)
    1 cup chopped onions
    1/2 cup green peppers
    3 tomatos chopped (I prefer them peeled)
    2 tsp Cumin powder
    3 Tbsp chili powder
    1 tsp garlic powder
    1 1/2 tsp black powder
    1 1/2 tsp salt
    2 cups water

Directions

Spray large pot with non-stick spray, and heat over med-high heat. Add soy crumbles, onions, and peppers. Cook for just a few minutes until onions start to "sweat".

Add tomato sauce, beans (including liquid), and rest of ingredients. Stir well to mix.

Reduce heat to simmer. Stir every 15-20 minutes for 2-3 hours.

Makes 9 1.25 cup servings


AWESOME paired with some high-fiber pasta and laughing cow light cheese for a bowl of "chili mac". Nutritional values would need to be reassessed for that.
