Avocado Quesadillas

Ingredients

Ingredients: 10 tortillas, 1 tbsp mayo, 1/2 cup shredded cheese (I used a Mexican blend 4 cheeses), 1 can corn, 1 can black beans, 1 avocado, 1 jar salsa (I used Peach medium).
Note: Don't be afraid to try salsa a little spicier than you might eat as the cheese mellow the spice.
Directions
Each quesadilla makes 6 pieces. I would say 2 servings per
quesadilla for a side dish or 1 quesadilla for a main dish.
Spread mayo on one side of two tortillas. (It sounds weird, but you can't taste it. It keeps the tortillas soft and the cheese from flying all over when you flip the quesadilla.) Sprinkle a layer of cheese on one of the tortillas, mayo side up. Top with veggies, salsa, another layer of cheese, then the second tortilla, mayo side down.
Cook in a skillet over medium heat, flipping once, until the tortilla is golden and the cheese is melted throughout--just like grilled cheese. Let cool for a couple of minutes, then slice with a pizza cutter.
Today I made 3 Quesadillas, and cut them into 6 pieces each. It used about 1/2 of the salsa, beans and corn. More for tomorrow!
