Introduction

This soup is perfect for the end of the gardening season when you have more lettuce and zucchini than you know what to do with. This soup is perfect for the end of the gardening season when you have more lettuce and zucchini than you know what to do with.
Number of Servings: 6

Ingredients

    1 large onion
    5 cloves garlic
    1 tbsp olive oil
    2 cups zucchini
    2 heads lettuce
    miso

Directions

Saute onions in olive oil, add garlic, then add zucchini. Add six cups of water or vegetable broth and bring to boil. After 10-15 minutes, add lettuce leaves and boil five more minutes until wilted.

Blend in a blender. Add about 2 tsp miso to each bowl of soup and stir or add 1/8 of cup to soup before blending if you are serving all the soup at once.
