Broccoli Cheese Soup

Ingredients

    1 bunch broccoli, chopped
    1/4 cup onion, chopped
    1 cup milk, nonfat
    1/2 cup cheddar cheese, lowfat, shredded
    3, chicken bullion cubes
    1 tsp garlic powder
    1 tsp mustard powder
    1 tsp. dried thyme

Directions

1. Chop fresh broccoli and onions into bite size peices. Steam cook with 1/2 cup water on bottom of pan until tender. Add bullion cubes, let desolve.

2.Add milk and spices. Bring to a gentle boil, reduce heat, add cheese, and let simmer 10 minutes.

3. Enjoy :)

  • Very easy to make and perfect for one of two people. I used low-sodium chicken bouillon to make this. However there is way too much thyme in this recipe (and I LIKE thyme!), I would definitely cut the thyme back to 1/4 teaspoon or maybe just a pinch. - 2/1/11
