Cheesy Broccoli Soup

Introduction

This is such a quick and easy recipe. When I fixed it for a family reunion, they really enjoyed it and were surprised it was made with low fat ingredients. This is such a quick and easy recipe. When I fixed it for a family reunion, they really enjoyed it and were surprised it was made with low fat ingredients.
Number of Servings: 8

Ingredients

    6 C water
    1 C dry instant potato flakes
    2# frozen chopped broccoli
    1 T chicken bouillon granules
    1# lite Velveeta, cubed
    2 cans (98% fat free) cream of chicken soup
    1 C skim milk

Directions

1. Bring water to boil in a large kettle.
2. Add the instant potato flakes, chopped broccoli, and bouillon granules.
3. Reduce heat, cover and simmer for about 10 minutes, or until broccoli is tender.
4. Stir in cheese, soup and milk. Cook and stir until cheese is melted.
5. Serve immediately.
Makes 8 servings, about 2 cups each.
Note: This also freezes very nicely!
