Steamed Mussels with Fettuccini

Introduction

Ingredients

    2 lbs live mussels, cleaned and beards removed
    1/2 stick butter
    1 leak, sliced
    1/2 cup scallions, sliced
    3 cloves garlic, chopped
    1 cup cherry tomatoes, halved
    1 lemon, juice yields
    1 tsp red pepper flakes
    1 can chicken broth
    1 cup white wine
    4 ounces spinach fettuccine, cooked

Directions

To clean Mussels:
Rinse the mussels under cold running water while scrubbing with a vegetable brush. Discard any with broken shells and peal off beards.
Cooking Instructions:
Heat butter in a 6 to 8-quart stockpot. Saute the leek, scallion, garlic and tomatoes. Add the mussels and give them a good toss. Add wine, chicken broth, lemon juice and red pepper flakes; cover the pot and steam over medium-high for 5-10 minutes until the mussels open.

Ladle mussels and broth over 2 plates of fettuccine and enjoy!
