Introduction

This Étouffée is a family recipe given to us by a friend from Louisiana. Most Étouffées you see with have a dark red or blonde roux base this one doesn't. We ladle it over rice and serve with french bread, it is savory and delicious. This Étouffée is a family recipe given to us by a friend from Louisiana. Ingredients

    1 stick butter. salted
    1 cup onion, diced
    1 cup green bell pepper, diced
    1 tablespoons gumbo filé
    1-2 teaspoons cayenne pepper (optional, to taste)
    2 cups chicken broth
    1 pound crawfish tails
    2 cups white rice, cooked
    4 slices crusty french bread


Directions

Melt one stick of butter in a large saute pan. Add onion, bell pepper, and celery. Saute until onion becomes soft and translucent then add gumbo file and cayenne. Stir to coat, add chicken broth and crawfish tails heat let simmer for 5 minutes.

Ladle 1/4 of Étouffée over 1/2 cup and serve with 1 piece of crusty bread.
