Linguine and clams

Introduction

A light version of linguine and clam sauce. A light version of linguine and clam sauce.
Number of Servings: 6

Ingredients

    1 1/2 c canned calm meat, drained, reserve 1/2 of juice
    4 cloves minced garlic
    2 shallots, minced
    2 tbsp olive oil
    4 cups cooked whole wheat pasta
    1 cup fat free strained greek yogurt
    1/2 cup white wine
    1/2 parmesan cheese
    8 fresh basil leaves chopped
    salt and pepper to taste

Directions

Cook whole wheat pasta as directed on package. Saute' shallots and garlic in olive oil. Remove clams from can reserving 1/2 the juice for the sauce. Add clams to skillet and saute 2 minutes. Pour white wine into pan letting it boil, removing all alcohol. Add clam stock and cook down to half its liquid. Remove from heat and add yogurt, chopped basil leaves and Parmesan cheese. Serve over pasta
