16 Bean Soup

Introduction

Ingredients

    1# bag of 16 bean mix (Goya)
    6 cups of water
    1 bay leaf
    1/2 tsp salt
    1/4 tsp pepper
    2 stalks of celery minced
    1 medium carrot chopped
    1 medium onion minced
    1/4 cup of ham (fully cooked) minced *


    * I bought a pkg of individual ham steaks (about the size of my hand) trimmed the edges and it made about 1/4 cup


Directions

Sort the dry beans and remove foreign objects. Soak the beans in 6 cups of cold water (covered) overnight. Rinse in cold water and drain. In a large soup pot (dutch oven) mix the beans, minced onion, chopped carrot, minced celery, 1/2 tsp. salt 1/4 tsp pepper, 1 bay leaf , 1/4 cup diced fully cooked ham, and 6 cups of water. Bring to a rolling boil. Let boil 10 minutes then reduce to a simmer (low heat) and cover. Cook until beans are tender - about and hour and a half. Stir every 10-15 minutes to prevent sticking.
