Introduction

This is an extremely easy weeknight crock pot meal. This is an extremely easy weeknight crock pot meal.
Number of Servings: 4

Ingredients

    1 lb. (2 or 3) frozen chicken breasts
    1/2 c. brown rice
    2 cans (undrained) black beans
    2 c. (a 16 oz. jar) salsa
    2 tablespoons Victoria Taylor's Texas red spice mix

Directions

Place all ingredients except spice mix in a crock pot. Cook on low for 8-10 hours. Add spice mix about 30 minutes before serving. Add cheese, sour cream, or avocado if desired.
