Chicken and Zucchini in Tomato Sauce

Ingredients

    Skinless, Boneless Chicken Breast 2
    Onions, chopped, 1/2 C
    Sweet Red Peppers, cut up, 1 C
    Zucchini, cut up, 1 3/4 C (about two medium)
    Canned Tomatoes, 1 1/3 C
    Basil, dried, 1 tsp
    Thyme, dried, 1 tsp
    Rosemary, dried, 1/2 tsp
    Paprika, 1/4 tsp
    Salt, 1/2 tsp
    Black Pepper, freshly ground, 2 dash
    Garlic, cut up, 2 cloves
    White Wine, 1/4 C

Directions

In a skillet pour a very small amount of water and bring to a boil. Place chicken breasts in boiling water, reduce heat to med. cover and let cook for 5 min.
Meanwhile prepare onion and peppers.
Turn chicken breasts, add onion and peppers around breasts, cover and let cook another 5 min.
Add remaining ingredients and simmer until zucchini and chicken are done.
