Ingredients

    1 pound boneless skinless chicken thighs, cubed
    1 teas salt
    1 teas ground cumin
    1 bay leaf
    1 chipotle pepper in adobo sauce, minced
    1 medium onion, diced
    1 can (15 ounces) navy beans, rinced and drained
    1 can (15 ounces) black beans, rinsed and drained
    1 can (14 1/2 ounces) crushed tomatoes, undrained
    1 1/2 cups chicken stock
    1/2 cup fresh squeezed orange juice
    1/4 cup chpped fresh cilanto (OPTIONAL)

Directions

CROCK POT RECIPE

Combine all ingredients, except cilantro in a 4 1/2 quart crock pot slow cooker. Cover; cook on LOW 7 to 8 hours or on HIGH 4 to 5 hours

Remove bay leaf before serving. Garnish with the cilantro, if desired.
