Introduction

Threw a bunch of stuff together and needed a calorie total. Makes 8 (1 cup) servings
Works great with whatever you want to throw in, you'll just have to recalculate for your ingredients

Works great with whatever you want to throw in, you'll just have to recalculate for your ingredients

Number of Servings: 8

Ingredients

    1 pound ground beef - cooked, drained and rinsed
    1 cup long grain brown rice
    1 can (14.5 oz) diced tomatoes with green chilies
    1 can black beans (15 oz)
    1 can no salt added whole kernel corn (15.25 oz)
    2 cups water - doesn't need to be warm

Directions

Cook, drain and rinse ground beef
Put meat back in a large pan
Drain corn and beans - rinse if you want - add to meat
Add canned tomatoes juice and all to mixture
Mix in 1 cup dry rice and 2 cups of water
Bring to a boil, cover and reduce heat, simmer until the rice is cooked & most liquid is absorbed (45-55 min)
