Introduction

Add your favorite fresh or canned vegetables to the okra in this dish. Bake with or without the corn muffin mix.
For quicker cooking time, cook first half in microwave and finish in oven.

Number of Servings: 4

Ingredients

    Okra
    Sweet yellow pepper
    Onion
    Corn
    Cheddar Cheese
    Corn muffin mix
    Egg
    Milk

Directions

Chop vegetables. Divide cheese and vegetables in half. Layer okra, pepper, onion, corn and cheese in 2 1/2 quart baking dish. Repeat with second half. Bake for 30 minutes in 400 degree oven or 8 minutes in microwave.

Prepare Jiffy corn muffin mix as directed with egg and milk, for corn muffins. Spread 1/2 of muffin batter over vegetables. Bake 20 minutes more.

Make muffins with second half of batter.

Serves 4-6.
