Cool Bean Salad

Introduction

Good side dish or can be a summer lunch. High in fiber. Good side dish or can be a summer lunch. High in fiber.
Number of Servings: 12

Ingredients

    1 (15 oz.) can of READ 3 bean salad, drained
    1 cup diced fresh red pepper
    1 cup diced green pepper
    2 Tbsp. fresh parsely, or 1 Tbsp. dried
    1 cup chopped red onions
    1/2 cup Italian Salad dressing
    1 cup Chickpeas (garbanzo)
    1/2 cup diced celery

Directions

Drain garbanozs and bean salad; add together in large bowl. Mix together peppers, parsely, celery and onion; add to bean mixture. Toss together with salad dressing, chill several hours or over night. Yeild: 12 (1/3 cup) servings

Light dressing can be used ( I do not use anything with high fruit corn syurp in it ). Also, for more protien, a 1/2 cup of Edame ( soy beans ) can be added also. These additions will change nutrition info.
