Low Calorie Zucchini Muffins

Ingredients

    1c. AP flour
    1c. whole wheat flour
    1 tbsp baking powder
    1/4 tsp salt
    1/4 tsp cinnamon
    1/2 c. sugar
    1 c. zucchini, shredded, packed
    1 tbsp lemon zest
    2 tbsp canola oil
    1 egg
    1 c. skim milk
    1/2 c. raisins

Directions

1. In a large bowl, mix the dry ingredients.
2. In second bowl, mix the wet ingredients.
3. Make a well in the dry ingredients and pour in the wet. Stir until just mixed.
4. Line muffin pan with muffin cups or spray with non stick spray.
5. Bake for 20 mins in 400 degree oven.
