Ingredients

    1 lb chicken
    2 tbs oil
    1 c low sugar apricot preserves
    2 tbs soy sauce
    1 8oz pineapple chunks

Directions

cut chicken in cubes and brown in the olive oil. Add juice from pineapple can, wait until this evaporates. Add apricot preserves and pineapple chunks and soy sauce(mix before adding) and cook until sauce thickens.

Serve over rice (not included in nutritional information
