Italian Chicken and Noodles

Introduction

Just threw this together for dinner. Just threw this together for dinner.
Number of Servings: 6

Ingredients

    6 - 6oz boneless skinless chicken breasts, pounded to 1/2 inch thickness
    1/2cup eggbeaters
    1 1/2cups Italian breadcrumbs with romano cheese
    1/2cup shredded mozzarella
    12 ozs egg noodles
    3 cups cabernet marinara
    6T Parmesan cheese, grated

Directions

Preheat oven to 400.

Prepare egg noodles as directed on package.

Warm marinara in saucepan over low heat.

Put eggbeaters in one bowl and breadcrumbs in another. Dip each breast in eggbeaters, shaking off excess and then in breadcrumbs, coating completely. Place on baking sheet sprayed with nonstick spray.

Bake in preheated oven for 25 minutes until golden brown and crispy. Top each piece of chicken with aprox 2T's of mozzarella cheese. Place back in oven for 5 minutes until cheese is melted.

To serve put two cups egg noodles on plate, top with 1/2cup marinara and 1T parmesan. Place one chicken breast on top. Enjoy!
