Introduction

This is made in the microwave and is fast and easy. Italian seasoning can be added also. This is made in the microwave and is fast and easy. Italian seasoning can be added also.

Ingredients

    1 eggplant, peeled and cubed
    1 medium onion, chopped
    1 large tomato, peeled and cubed
    1/4 cup mozzarella cheese
    1/2 ts garlic salt
    pepper to taste

Directions

Place eggplant, onion, and tomato in microwave safe dish with lid. Cook for 8 minutes on high. Add rice and cook 2 more minutes. Let sit 5 minutes. Add garlic salt, pepper and cheese. Good with beef or chicken as a side dish.
