Meatloaf Twist ala Rita

Introduction

Ground Turkey and Ground Beef, with a mozzarella twist Ground Turkey and Ground Beef, with a mozzarella twist
Number of Servings: 18

Ingredients

    20 oz 93% lean ground turkey
    1-1/2 lb 93% lean ground beef
    1-1/2 cup chopped onion
    2 cups grated zucchini
    4 cloves garlic, chopped or minced
    1 cup Wheat Germ
    2 eggs
    4 slices mozzarella cheese

Directions

Mix together first 7 ingredients. Make 18 - 1/3 cup sized balls. Cut cheese slices into quarters. Stuff each quarter into ball and seal. Spray non-stick spray in baking dish (or use muffin tins) and place balls. Bake in 350* oven 30 minutes. Serves 18
