Introduction

The healthiest version I can think of... using greek yogurt, splenda for baking.Surprised my self at how good these were. Kids LOVED them. Ingredients

    Splenda Sugar Blend,12g or 2 tbl
    Egg white, 3
    Banana, fresh, 2cup, mashed
    Fage 0%, .75c
    Vanilla Extract, 1 tsp
    King Arthur Flour Unbleached White Whole Wheat Flour, 2c
    Bobís Redmill Low-Carb Baking Mix (1/4 cup) 30g, .5 cup
    Baking Soda, 1 tsp
    kosher salt, 1 tsp
    Cinnamon, ground, .5 tsp
    Nutmeg, ground, .5 tsp

Directions

Pre heat oven to 350
Pam baking loaf or mini / muffin pan

In large bowl combine flour, baking soda, salt, cinnamon and nutmeg... set aside

In another bowl combine
Sugar, eggs, yogurt, oil, vanilla and bananas

Slowly add dry to wet just until moist.... add nut if desired

Bake for about an hour at 350 or until a inserted comes out clean
If using muffin or mini muffin pans the baking time will be shorter... the hour is for a loaf pan
Allow to cool for a few hours.
I like to wrap mine in cling wrap and sit overnight before cutting

For me this made one BIG loaf and 12 mini muffins. It easily would have made 48 mini muffins or 2 smaller loafs
