Introduction

This recipe makes a lot. But it is great for a easy,quick summer lunch or as a side dish. This recipe makes a lot. But it is great for a easy,quick summer lunch or as a side dish.

Ingredients

    1Box (13.25 oz) Whole wheat elbow roni
    ! Red bell pepper
    1Green bell pepper
    1.5 cup diced tomatoes
    2-3 green onions
    1/2 cup fat free sour cream
    1/2 cup light mayonnaise
    2 cans (5 oz) chicken
    2 oz shredded mozzarella cheese
    2 Tablespoons finely shredded Parmesan cheese
    1-2 packets ranch dressing powder
    1 can large black olives

Directions

Cook pasta according to directions on box. While macaroni is cooking, chop veggies. Drain macaroni and rinse with cool water. Drain well. Mix sour cream, mayo and ranch powder in small bowl. Mix well all ingredients in really big bowl. Serve immediately, or store in airtight container in fridge.
