Frosted Shortbread cookies

Number of Servings: 20

Ingredients

    *cookies
    3/4 cup light brown sugar
    1 cup butter
    1 egg yolk
    2 cup flour

    *frosting
    2 tbsp butter
    1 1/4 powdered sugar
    5 tsp milk
    1/2 tsp vanilla extract (you can use any flavor, lemon is good too!)

Directions

Makes roughly 20 tbsp drop cookies

Pre-heat oven to 325.

Beat sugar and butter until fluffy with mixer. Add egg yolk, and slowly stir in flour. Cover with plastic wrap and refrigerate for 10-15 minutes. Form into tablespoon size balls. Cook for 10-14 minutes, until light brown.

To make frosting, mix all four ingredients until smooth. Pipe or spoon on top of cookies.
