Black Bean and Fresh Tomato Salsa

Introduction

Number of Servings: 18

Ingredients

    4 cups chopped fresh tomatoes
    3 cups dried black beans, cooked in salted water until tender, and cooled (we used canned black beans)
    1 cup small diced red onions
    1 large fresh jalapeno, seed and cut into small dice
    1/2 cup loosely packed chopped fresh cilantro leaves
    1 T chopped fresh parsley leaves
    1 T chopped garlic
    Salt
    Freshly ground black pepper
    6 T fresh or bottled lime juice
    1 T extra virgin olive oil (we used regular olive oil)
    1 can yellow corn

Directions

Combine all ingredients in a mixing bowl except lime juice and olive oil. Season with Salt and Pepper. Add the lime juice and olive oil. Mix Well. Spoon into a serving bowl and serve with chips. Serving Size: 1/2 cup
