Nutty Granola Mini Bars

Introduction

Number of Servings: 24

Ingredients

    1/2 cup low fat Peanut Butter
    1/3 cup Honey
    1 egg
    1 tsp vanilla extract (or you can use Maple extract if you'd like)
    1 tbsp Canola Oil
    3-1./ cups Quaker Oats
    1/2 cup Brown Sugar
    5 tbsp Hersheys Semisweet mini chocolate chips
    2 oz Almonds, rough chopped
    1 tbsp Flax Seeds (whole)
    2 oz raw sunflower seeds (shelled, no salt)
    1 oz raw pumpkin seeds (shelled, no salt)


Directions

In a large bowl, beat the peanut butter, honey, egg, oil and vanilla/maple extract untl blended. Combine the oats, brown sugar .... add to the peanut butter mixture and mix well. Stir in chips, seeds and nuts. Batter will be very sticky so spray a spatual with PAM to make spreading it in pan easier.

Transfer to a 13x9 inch baking dish coated with cooking spray. Bake at 350 degrees for 12-15 minutes or until set and edges are lightly browned. Cool on a wire rack. Cut into 24 squares

Each square is 159 calories

If you choose to make this with brown sugar "twin", then calories per bar are 142 each
