My potato soup




Number of Servings: 8

Ingredients

    1 tsp olive oil
    1 cup sliced shallots and/or onions
    2 garlic cloves, minced

    4 cups cubed potatoes
    1 cup sliced carrots
    1 1/2 cups sliced celery

    4 cups low sodium chicken stock
    2 cups homemade chicken stock...no sodium
    1/4 cup whole wheat acini di pepe

    1/2 tsp marjoram
    1/2 tsp thyme

Directions

Slow cook onions and garlic in oil until clear. Add to crock pot along with stock, vegetables and seasonings. Cook 8 hours on high.

Makes 8 servings.
