Farm Fresh Egg Bake

Introduction

Use your farmshare box veggies and fresh eggs to make this delicious egg bake Use your farmshare box veggies and fresh eggs to make this delicious egg bake
Number of Servings: 8

Ingredients

    3-4 Medium Bell Peppers (various colors)
    6 -10 Mushrooms
    1 Red Potato
    10 Large Eggs
    1 Medium Zucchini
    1 Medium Yellow Squash
    2 Tbsp Extra Virgin Olive Oil
    6 Slices Canadian Bacon

Directions

Preheat oven to 325

Cut all veggies into small bite-size pieces and saute in pan with olive oil.

Put all veggies into 9x11 inch glass casserole pan

whip 10 eggs in a separate bowl then add to casserole

Bake on center rack for 20 minutes. If more time is needed, broil with oven door open and keep an eye on it.

Cut in to 8 pieces and enjoy!!!!!
