Bison Stuffed Peppers

Number of Servings: 4

Ingredients

    *Bison Meat, 16 oz (remove)
    *Bell Pepper - Whole Green, 4 serving (remove)
    Couscous, 1 cup, dry, yields (remove)
    Del Monte Diced Tomatoes, No Salt Added, 1.75 cup (remove)
    *Hunt's Tomato Sauce, no salt added, 0.5 cup (remove)
    *Cheese (Sargento)reduced sodium mozzarella (1/4c), 0.5 cup (remove)

Directions

Cook bison in a pan.

Prep peppers

Fill peppers with 1/4 of the bison and 1/4 of the can of diced tomatoes

Cook in the oven for 20 minutes

Use tomato liquid to make the couscous

Divide into 4 containers and pour 1/4 of the tomato sauce over the couscous

Put a pepper on top of the couscous and add the cheese on top.
