Rustic Chicken Mushroom Stew

Ingredients

    16 Chicken Thighs, skin and visible fat removed
    1/4 cup Whole Wheat Flour
    1 tsp black pepper
    1 chopped red pepper
    2 tbsp Olive Oil
    2 onions, chopped
    1 entire bulb of roasted garlic
    6 cups Blue Menu Stewed Tomatoes
    4 tbsp Unico Tomato Paste
    1/2 cup Blue Menu Chicken Broth
    2 tbsp balsamic vinegar
    8 cups sliced fresh Mushrooms
    2 tbsp fresh Rosemary, chopped
    1 tbsp fresh Thyme

Directions

Preheat oven to 375 degrees.

Season flour with black pepper and toss chicken thighs in mixture, working in batches to coat. Reserve any leftover flour.

Heat half of the oil in a large skillet set over medium heat. Brown the chicken on all sides, working in batches and adding remaining oil as needed. Arrange in a single layer in a 9 x 13 inch casserole dish. Set aside.

In the large skillet, cook the onions, red pepper, and fresh herbs. Cook, sitrring often for 5 minutes or until tender. Add mushrooms and cook on high for 5 minutes longer. Sprinkle reserved flour mixture over vegetables, stir until well coated. Add balsamic vinegar and stir browned bits from the pan. Add tomatoes, tomato paste, browth and roasted garlic. Bring to a boil.

Pour tomato mixture over the chicken. bake, uncovered for 30 minutes or until chicken is cooked through and juices are thickened. Taste and adjust seasonings as needed.

Makes 8 servings of 2 chicken thighs with sauce each
